168pp inc index and many b&w and colour illustrations - Not for the vegan or vegetarian, this is Patten's book for the steak lovers amongst us. Patten begins by describing how to "know your beef" and bases the book on David Garrick (18th Century British actor), comment that, "Heaven sends us good meat. But the devil sends cooks" and feels it's her privilege to help the latter become as good as the former. Not just another cookery book from the Doyen of British Cooking, but the epitome of her work, at least in so far as cooking meat is concerned. She even goes so far as to describe how to rear and then to cut beef with diagrams of English (as well as French, American and Australian) cuts.
